Wild fennel grows naturally throughout the Sonoma countryside. Though it is common to use fennel seeds for flavor, we have chosen to highlight our sauce with the edible celery-like stalk of this plant. This unique flavoring, combined with the richness of Pecorino Romano cheese, creates a refreshingly different sauce.
