Roasted Eggplant- Spreads

This perfect pantry item can be used as an appetizer, condiment or cooking ingredient. Adding a layer of eggplant spread to lassagna will take you and your guests back to the Old Country.

Add breadcrumbsto create a versatile stuffing for meats and vegatables. This stuffing is excellent for artichokes; trim the spiny tops off the leaves and cut the stem so it will sit upright. Remove the choke from the center and fill the cavity with stuffing. Place artichokes in a covered baking dish with a small amount of water or stock and bake until cooked through. Pometta's Egplant spread is best when served warm or at room temperature.
